Above 10.0 FFA we do not pay. It is not cost-effective to make bio fuels from used cooking oils with FFA above 10.0

Fats we do not collect or trade fats. Put frying pan and cooking tray fats in separate containers to solidify solid then bin, do not feed to birds RSPB, do not mix fats with used cooking oil.

Used cooking oil storage and collection service:

1. From fryers re-fill fresh cooking oil containers with used cooking oils to near top containers to prevent overfilling, spillage and maximise transport, replace tops, if piercing tops steel containers to let air in please pierce once to back handle as we have to re-seal using special tape to legal transport used cooking oils.

2. Store indoors out of weather no water contamination or other contamination.

3. Minimum per collection is 100 litres 5x20 steel or HDPE containers.

4. Email our free oil collection and delivery services oil@biodiesel-energy.co.uk  to arrange collection include collection address including postcode and contact name.

5. Collection:

About FFA.

To keep FFA low change cooking oil more often it gives your customers better quality cooked food and higher payments from us for used cooking oil.

FFA information remains private between management Biodiesel Energy (us) and management producer (you) guaranteed, no FFA notes or records are produced and we do not have to keep FFA records.

FFA test strips supplied to our used cooking oil suppliers only.

Chefs cooking oil FFA testing is a measure of quality and higher prices paid for your companies used cooking oils. The higher the FFA the older and "more used" is the cooking oil the lower price we pay your company, we make it pay your company to change cooking oil it pays your company and our company, every cooking oil has a life cycle. FFA in used cooking oils is not oil it is fats etc from food, Production of biodiesel from used cooking oil the FFA becomes by-product glycerol (soap), glycerol cost us very high price to dispose to licensed company this is the reason chefs need to understand why we do not buy used cooking oils with high FFA for example FFA 8.0 only 80% is used cooking oil we are paying your company for 100% used cooking oil, we have to pay 20% FFA disposal that is allowed in the cost we pay your company. FFA 20.0 only about 30% is oil.

In some countries food industry FFA limit is 5.0 this is why high number of world bulk used cooking oils for sale have FFA 3.0 - 5.0 to keep up with demand for quality used cooking oils we have to ship used cooking oils into the UK, we hope to reduce imports to UK in the future as more used cooking oil suppliers in UK supply us with quality used cooking oils. The highest FFA we have come across was in Scotland where the FFA was 38.5 (past E below) we tested our test equipment then re-tested FFA three times to believe this was true, it was.

O- A. Break-in Oil (new oil)

White appearance of oil; no odors in cooked food; very little oil soak up by food materials.

A-B. Fresh Oil

Slight browning at the edges of the fry; crisping, more oil soak up by food materials.

B-C. Optimum Oil

Golden brown color; good crisping; optimal soak up by food materials.

C-D. Degrading Oil

Darken fry with too crisp edges, spots and hardening.  Too much soak up.

D-E. Runaway Oil

Hard rock fry surfaces; bad odor and too much oil soak up.  Uneven cooking.

Early in the cycle, the quality of fried food is not the best, as there is conditioning of the oil to achieve the best taste and texture result.  This break-in period is brief, and soon the oil is at a fresh to optimum (five star) cooking level.  As the oil gets older, it continues to break down, producing discoloration of the cooked food, and eventually bad flavors and rancid aftertaste. This entire cycle can be tracked chemically by determining the level of the FFA's using our test strips.  

Clearly, any operation will produce a better food product if oil is renewed as soon as it reaches phase "C" in this cycle.  The only way to really do this is to measure the condition of the oil by measuring FFA's, and the only way to do this in the kitchen or commissary is using a test strip.

How to use and interpret the strips

Food processing

Low range monitoring strips use in five star deluxe kitchens, five star kitchens, seafood, chicken and food processing. 5 * * * * * +

Low level strips are used where regulatory requirements call for a lower range, or where the importance of quality is extremely important--generally food processing applications will require the low range.  Retail food preparation generally will do well with the higher range--high volume food processing is better with the low range.

The scale in the critical transition from optimum to degrading is much finer, allowing complete control over oil quality in processing operation, and control over cooking results with particularly sensitive or delicate food types. In these operations, a reading of >2.5% would call for oil renewal, while the readings at 1.0% through 2.0% FFA would indicate how close the operation is coming to a need for change oil.

Normal monitoring strips correspond to the above cycle, and can be interpreted to make good decisions about your cooking oil's condition.

Color bands run from good to bad. Green indicates changing. The lowest reading (2.0% FFA) strip 1 is indicated when only the lowest color band has changed color from blue to yellow.  Each successive band that changes color from blue to yellow indicates a higher level.  Frying chips will increase FFA slow. Frying Fatty products will increase FFA fast.

The highest level is 7.0% FFA or above.  This is indicated when all four color bands are yellow.

These stages correspond to the oil cycle above in an overall sense, but depend upon the type of oil, temperature of cooking, and other factors. Generally however, the guidelines to follow are as follows:

Stage 1. OK, past the break-in period and going towards fresh oil or optimum.

Stage 2. Probably OK, but check food quality.

Stage 3. Probably NOT OK, but if food quality is good, keep using the oil "if in doubt, change oil" rule.

Stage 4. Bad oil. change oil.

Do NOT mix batches of used cooking oils, keep every fryer change separate mark used cooking oil containers to identify batches

Every batch could have different FFA for example if batches was mixed a 5.0 and 11.0 could FFA at say 7.5 reducing the price paid for 5.0 to 7.5

We test FFA free of charge at time of used cooking oil collections, tests are carried out on each waste cooking oil batch (every fryer batch changed) in the presence of authorised management staff only so the correct payments can be paid.

Strip type choice guide

Internal quality guidelines or mandated or recommended Federal Food Programs will specify levels of FFA that are acceptable.  In these cases, the choice is simple: purchase the strips that will give the needed monitoring results.

Otherwise, here is a practical guide to what strips are best for your operation:
